ABOUT: The Cusine Family has been operating the prestigious Pares Balta Winery in Penedes, Spain, for 3 generations. Gratavinum is their exploration of the wild and rugged landscape of Gratallops, Priorat, where they have 17 hectares of Garnacha, Carignan, Cabernet Sauvignon, Syrah, and Merlot. Roundness is the approach to this wine, 2PiR being the mathematical equation for the circumference of a circle. To achieve this, 40% Garnacha, 30% Carinena, and splashes of Cabernet Sauvignon and Syrah are employed to carry out the task. The wine spends 12 months in new oak, helping to create a medium to full-bodied liquid, with the rest of it's life spent in Hungarian and French oak.
TASTE: The result is concentrated flavors of red fruits, baking spices, herbs and smoky meat. A higher level of acidity adds refreshment to the richness, and the finish is long. This wine will age well and will be drinking for many years to come.
PAIR: Moroccan spices, wild mushrooms, lentils, beans, mac&che, paprika, carrots, beets and parsnips.
